The Bruce Trail in Ontario follows the Niagara Escarpment, a stone rib that runs from Niagara Falls to Tobermory at the point of the Bruce Penninusula between Lake huron and Georgian Bay - Approx. 500 miles end to end with an additional couple hundred miles of side trails that are worth exploring. The Niagara Escarpment was proclaimed a UNESCO World Biosphere Reserve by the United Nations in 1990. Check out http://www.brucetrail.org/index.htm
If you only have time to do part of it - hike the northern half of it.
