You can have a pack on, walk miles up mountains, and just sort of lumber on like that for hours.

But when you get to somewhere on the trail where the water source is say, down from a gap camp - a walk down to the water source (without pack) and back wears you out.

Then you can put your pack back on and plod down the trail for a few more miles.

What is is about taking off your pack and walking these short distances that makes me feels so worn out?

I don't have that problem myself so I can't say. Prolly when you take your pack off your body is telling itself, "Self, we're through for the day."

It's the conquest of point A to point B. . . then you find more work headed to the water when you really just wanted a rest. . . and sometimes knowing there's time to get to point C. . .

A long time back when I was a newly pinned butter bar I was considering buying a big ass house boat. My Platoon SGT passed on this bit of wisdom: "If it flies, floats or f^(%$ it is cheaper to rent it." I have heeded 2/3 of that advice as I was already married.

On the original question - same with me too. What I find helps is to drop the pack, fetch the water come pack and take a snack and shoes and socks off rest break.

Yea, once I put my pack down, it seems like instant laziness. I was hiking the other day and came across a spring spouting from some rocks and it just happened to be about eye level. I just stuck my face in it and cameled up for about 10 mins.
