Going to tinker with making hummus on the trail.

Im thinking that if I dehydrate the chick peas, I can then grind them into a fine powder in the coffee bean grinder and add water on the trail.

Tahini... how best to add that?
Maybe some garlic powder?
Oooo, sun dried tomatoes, also ground?

Ideas? Input?

Im betting a place like Whole Foods would have that???

Whole Foods has already mixed dry hummus. Just add water and a little oil. It's pretty decent. I don't know your Whole Foods, but my best guess would be in the canned/international foods.

Whole foods should sell bulk dried chick peas. I've tried doing a similar process before, and failed. If you figure it out.....please let me know!!! Even if you don't get a good powder out of them, they should rehydrate into something tasty!

Use your coffee grinder to get a really fine powder. Works great.

Suggestion: either keep the spices far, far away from your coffee grinder or get a second grinder. Made the mistake of putting some funky shit I was using to make masala tea in my coffee grinder.

Not good.

Better yet.

Just get some cardboard and soak it in a nearby stream.

Mash it to a pulp and serve on a cracker.

Same texture and consistency.

and you're recycling.

Fantastic Foods sells the add water & oil version in local grocer.

Kinda lemon heavy, but very edible.

Rosaleen
2011-05-05, 15:29
Two suggestions: 1) Buy Fantastic Foods hummus, already dry; 2) Make the hummus up to suite your palate and dehydrate it. I found some spinach-paremesan hummus years ago that even my husband liked. We ate the FF spinach-parmesan with lime corn chips. I had success dehydrating commercial red pepper hummus. Dry thoroughly and crush the dried product into a powder. On the rail, add water and wait a bit. Eat the hummus with your choice of crackers, chips, pita bread, couscous, or even vegetables as a dip.

my hiking partner is always bringing cous-cous, hummus, quinoa etc.... to cook in the evenings.

i prefer $1 knorr meals, ramen mixed w/ instant mashed potatoes and dried bacon, rice and beans etc.....
all cook quick and don't burn up too much alcohol.

my meal is cooked, eaten, and digesting and i'm off cutting up more firewood while she's still stirring and waiting........and waiting.......... then wonders why after a few days out we're running low on fuel.

damn hippie food.

Just do the calories per $ check, and if it's as cheap as peanut butter go for it.
Otherwise leave it for the Starbuck's crowd.

it seems as though there may be something to this "hippie food" after all........
http://pinchofyum.com/post/5215780276/pb-dark-chocolate-hummus

1 can white beans or chickpeas, rinsed
1/4 cup peanut butter
2 tbs. caramel sauce
2 tbs. maple syrup
1/4 cup brown sugar
pinch of cinnamon
1/4 cup milk
1/4 cup flour
chopped dark chocolate

Blend everything through milk in a food processor. Add flour by the spoonful and blend until desired consistency is reached. Stir in dark chocolate. Chill before serving.

i do believe this is getting forwarded this evening to the hiking partner.
maybe she'll share.

premade shit is expensive. i cook the chick peas for a little bit bc it removes the skins/husks? then food processor them with red peppers, garlic and lemon juice. then dehydrate. i never bother with the tahini bc its fat, being a seed and all,. and i figure it won't dry right and will probably become rancid. once the stuff is dry i buzz it again in the food processor. on the trail i carry one of those 2 cup screw-top plastic thingees and in the morning i'll boil a little extra water and add it then. by lunch it's cool and rehydrated. ususally have it once a week out there.
